Chestnut log recipe

Christmas holidays are coming and you have not yet chosen which dessert to serve at your table? How about cooking a tasty chestnut log? With Gîtes de France Corse, your table will have the opportunity to enjoy a delicious dessert with a typical ingredient: the chestnut!


Preparation time: 2 hours

Ingredients for chestnut log

1 kg chestnuts
300 g chocolate 
100 g butter 
1 soup spoon of sugar

Preparing chestnut log

Score chestnuts on both sides using sharp pointed knife and boil up for three minutes in a saucepan. Drain and remove chestnut skin. Put milk and sugar into a saucepan, followed by peeled chestnuts. Cook for 30 minutes over low heat.

Put content into a blender and mix in butter. Melt chocolate in saucepan over low heat with two spoonfuls of water.
Pour blended chestnut liquid into the molten chocolate and gently turn. When the mixture is fully blended, pour onto aluminium foil, lift edges to make into a roll. To hold roll in place, you can stiffen the aluminium wrap with a sheet of light cardboard.
Place log in fridge for 5 hours. When hard, remove aluminium and leave in a cool place for 1 hour before serving, to take off chill and allow flavours to develop.
To decorate, why not try a trickle of Chantilly cream, before powdering the roll with chocolate flakes. If the season is right, add Christmas decorations.
