Are you a fan of cooking and good food? Let yourself be tempted by the peasant soup recipe offered in Aleria and on the Côte-Orientale region of Corsica! Local specialty the peasant soup will give you a taste of East Corsican Coast at home!


The peasant soup

Ingredients:
- 1 piece of prisuttu bone
- 150 gr of spaghetti
- 200 gr of green beans
- 200 gr of red beans
- 4 zucchini
- 1/2 green cabbage
- 2 tomatoes
- 2 carrots
- 2 leeks
- 6 onions
- 3 cloves of garlic
- 5 basil leaves
- Marjoram
- Olive oil
- Salt and pepper.

Soak the kidney beans the night before.

Peel and cut the vegetables into small pieces as well as the onions.

Sauté everything in olive oil, with the drained beans.

Add salt and pepper. Cover with cold water.

Add the ham bone and marjoram.

Cook for 2 hours over medium heat.

When cooked, add the finely chopped basil and garlic and a little ham.

Add the pasta and cook for 10 minutes.

Serve hot.
